Falafel Pita
Falafel pita sandwiches are a very popular street food, and for good reason! They are loaded with fresh and vibrant flavors, crunchy veggies, and mouth-watering tahini sauce. If you have falafel and pita on hand, it is very easy to make and comes together in a matter of minutes. This delicious and satisfying vegan-friendly meal is perfect any time of the year!

Yield: 4 falafel pita sandwiches
Ingredients:
4 pitas
16 falafel patties (4 per pita)
2 Roma tomatoes
1/2 a cucumber
Directions:
Cut the pitas in half.
Spread tahini sauce on the inside of the pita pocket.
Break the falafel patties in half and evenly distribute them in the pita. There should be about 2 falafel patties in each pita half.
Add thinly sliced cucumbers and tomatoes to the sandwich.
Sprinkle pickled onions into the pita pocket.
Drizzle the sandwich with tahini sauce.
