Pickled Onions

This simple recipe for quick pickled onions is the easiest way to add a little extra pizzazz to almost any food. Elevate any sandwich, taco, grain bowl, burger, salad, or wrap by adding these delicious pickled onions. The recipe requires very little prep time for a huge flavor payoff. It is also very customizable, so you can change it up to suit your tastes and needs.

Prep Time: 10 minutes

Pickling Time: 30 minutes

Yield: 1 16oz jar of pickled onions

Ingredients:

  • 1 medium red onion

  • 1/3 cup white vinegar*

  • 1/3 cup apple cider vinegar*

  • 1/3 cup water

  • 2 cloves garlic

  • 2 bay leaves

  • 6 al1spice berries

  • 15 whole black peppercorns

  • 1 tsp kosher salt

  • 3-4 tsp turbinado sugar*

Directions:

  1. Thinly slice the red onion with a knife or using a mandoline.

  2. Place thinly sliced onions in a sterilized jar, along with the whole garlic cloves, bay leaves, allspice berries, and peppercorns.

  3. Add the vinegar and water to a pot and stir in the salt and sugar until dissolved.

  4. Then set the heat to medium and bring the vinegar mixture to a simmer, as soon as it simmers turn off the heat.

  5. Carefully pour the hot vinegar mixture into the jar, making sure that all the onions are submerged in the pickling liquid. If there are onions poking out of the pickling liquid you can press them down so everything is under the surface of the pickling liquid.

  6. Let the pickled onions cool down to room temperature. This should take about 30 minutes.

  7. At this point, you can serve the pickled onions or you can screw on the lid and put the jar in the refrigerator. The pickled onions will keep in the fridge for 2-3 weeks.

  8. Enjoy!

Additional Notes:

*You can use all white vinegar or all apple cider vinegar if you prefer. Red or white wine vinegar and rice vinegar also work nicely. Basically, you can use whatever vinegar you have on hand! If you want the pickled onions to have a more vinegary kick, you can use 3/4 cup of vinegar and 1/4 cup of water.

*If you want to try different flavor combinations you can omit any of the spices, or add whatever strikes your fancy - red pepper flakes, fresh jalapeño, mustard seeds, thyme, etc…

*If you do not want to use red onions, you can substitute them for white onions, pearl onions, or shallots.

*Any kind of sweetener works in this recipe, you can try honey, maple syrup, agave, or plain white sugar.
