Roasted Cauliflower with Green Tahini

These roasted cauliflower steaks are amazing on their own, but drizzle a little bit of green tahini on them and you have yourself an unforgettable meal! Ingredients:

  • 1 head of cauliflower

  • 4 tbsp olive oil

  • 1/2 tsp cumin

  • 1/2 tsp smoked paprika

  • 1/2 tsp sweet sweet paprika

  • 1/2 tsp sumac

  • Kosher salt to taste

  • Green tahini

Directions:

  1. Preheat oven to 450°F or 230°C.

  2. Wash and cut the cauliflower into steaks (wedges work here too).

  3. Combine 4 tablespoons of olive with the cumin, smoked paprika, sweet paprika, and sumac.

  4. Cover the cauliflower steaks with a thin layer of the marinade.

  5. Sprinkle kosher salt on the cauliflower steaks and pop them into the preheated oven.

  6. Roast the cauliflower for 25-30 minutes until it is starting to brown in spots.

  7. While the cauliflower is roasting make the green tahini sauce.

  8. Once the cauliflower is roasted, put the steaks on a plate and drizzle them with the green tahini sauce.
