Roasted Cauliflower with Green Tahini
Ingredients:
1 head of cauliflower
4 tbsp olive oil
1/2 tsp cumin
1/2 tsp smoked paprika
1/2 tsp sweet sweet paprika
1/2 tsp sumac
Kosher salt to taste
Directions:
Preheat oven to 450°F or 230°C.
Wash and cut the cauliflower into steaks (wedges work here too).
Combine 4 tablespoons of olive with the cumin, smoked paprika, sweet paprika, and sumac.
Cover the cauliflower steaks with a thin layer of the marinade.
Sprinkle kosher salt on the cauliflower steaks and pop them into the preheated oven.
Roast the cauliflower for 25-30 minutes until it is starting to brown in spots.
While the cauliflower is roasting make the green tahini sauce.
Once the cauliflower is roasted, put the steaks on a plate and drizzle them with the green tahini sauce.
