Green Tahini
Ingredients:
A handful of parsley (1/2 cup)*
A handful of cilantro (1/2 cup)*
2 rounded tbsp tahini paste
2-3 tbsp water
Juice of a lemon
5 cloves of garlic
1 jalapeño*
1 tsp kosher salt or to taste
Directions:
Add garlic, parsley, cilantro, tahini, lemon juice, water, jalapeño, and salt to the bowl of a food processor.
Pulse until you have a smooth green sauce.
Pour the green tahini into a bowl or jar.
Mix it and add water if the consistency seems too thick.
Taste for salt and adjust if necessary.
Serve immediately or refrigerate.

Additional Notes:
*You can also use mint or dill in addition to parsley and cilantro, you can use a combination of whatever fresh herbs you have on hand. It will change the flavor profile but it will still be delicious!
*the green tahini sauce will last covered in the refrigerator for a few days and up to a week.
