Green Tahini

Green tahini is a classic tahini sauce with an herbaceous twist and a little spicy kick. It is almost as if zhoug and tahini sauce had a very delicious baby. This sauce is vegan and super quick and easy to pull together. It is the perfect accompaniment to roasted veggies, and it is delicious on a sandwich or drizzled over a grain bowl…the possibilities are endless!

Prep Time: 10 minutes

Yield: 1 1/2 cups

Ingredients:

  • A handful of parsley (1/2 cup)*

  • A handful of cilantro (1/2 cup)*

  • 2 rounded tbsp tahini paste

  • 2-3 tbsp water

  • Juice of a lemon

  • 5 cloves of garlic

  • 1 jalapeño*

  • 1 tsp kosher salt or to taste

Directions:

  1. Add garlic, parsley, cilantro, tahini, lemon juice, water, jalapeño, and salt to the bowl of a food processor.

  2. Pulse until you have a smooth green sauce.

  3. Pour the green tahini into a bowl or jar.

  4. Mix it and add water if the consistency seems too thick.

  5. Taste for salt and adjust if necessary.

  6. Serve immediately or refrigerate.

  7. Enjoy!

Additional Notes:

*You can also use mint or dill in addition to parsley and cilantro, you can use a combination of whatever fresh herbs you have on hand. It will change the flavor profile but it will still be delicious!

*the green tahini sauce will last covered in the refrigerator for a few days and up to a week.
