Avocado Toast

Avocado cottage cheese toast with pickled onions and zhoug

Avocado toast with a slight twist. This one has cottage cheese on it so you get a little extra protein and creaminess without significantly upping the fat and calorie content. The addition of pickled onions and zhoug makes this particular avocado toast perfectly balanced, for a healthy and nourishing breakfast, brunch, or snack!

Prep Time: 10 Minutes

Serves: 2

Ingredients:

  • 2 slices of bread*

  • 1 avocado

  • 2/3 cup of cottage cheese (any percentage will do)

  • Pickled onions

  • Zhoug

  • Drizzle of olive oil

  • Kosher salt to taste

  • Crushed red pepper flakes to taste

Directions:

  1. Toast the bread.

  2. Cut the avocado in half, peel off the skin, and thinly slice it.

  3. Spread 1/3 cup of cottage cheese on each piece of toast.

  4. Add a thinly sliced avocado half to both toasts on top of the cottage cheese.

  5. Add some pickled onions, however many you like on top of the sliced avocado.

  6. Then add little dollops of zhoug all over the toasts.

  7. Drizzle with olive oil.

  8. Sprinkle salt and red pepper flakes to taste.

  9. Enjoy!

Additional Notes:

*Use gluten-free bread to make it gluten-free.
