Spicy Honey Garlic Salmon Bowl

This salmon bowl is one of the tastiest things you can make! It is reminiscent of a deconstructed spicy salmon sushi roll but it is super customizable so you can tailor it to suit your tastes. Not only is it easy, quick, and mind-blowingly delicious, but it is also very nourishing (mayonnaise aside) and satisfying. This is one of my husband’s favorite meals during the week, and he asks for it all the time! Make it, you will not regret it!

Serves: 2

Honey Garlic Salmon

Ingredients:

  • 2 salmon fillets (5-6oz each)

  • 4 tbsp honey

  • 3 tbsp soy sauce

  • 3 cloves garlic

  • 1/4 tsp cayenne pepper*

Salmon Bowl

Ingredients:

  • Roasted honey garlic salmon fillets

  • 2 cups cooked rice*

  • 1/2 cup steamed edamame

  • 1 avocado

  • Sliced cucumber

  • Sriracha mayo

  • 2 spring onions

  • 1/2 tsp sesame seeds

Directions:

  1. Preheat the oven to 400°F or 205°C.

  2. Cook 1 cup of rice.

  3. Place the salmon fillets in an oven-safe dish.

  4. Make the honey garlic marinade by combining the honey, soy sauce, garlic, minced garlic, and cayenne pepper.

  5. Pour the marinade equally over both salmon fillets.

  6. Roast the salmon in the preheated oven for 20 minutes, basting the salmon with the sauce halfway through the cooking time.

  7. While salmon is roasting prepare the other components; make the Sriracha mayo, steam the edamame, slice the avocado in half, and then into thin slices, thinly slice part of a cucumber, and the spring onions.

  8. Take the salmon out of the oven and baste again with the marinade that has dripped into the pan and set aside.

  9. Put one cup of rice into a bowl, along with with the sliced avocado half, 1/4 cup of edamame, some cucumber slices, and one of the salmon fillets.

  10. Drizzle the salmon bowl with Sriracha mayo.

  11. Sprinkle the bowl with some sliced spring onion and a 1/4 tsp of sesame seeds.

  12. Enjoy!

Additional Notes:

*If you do not like a little kick, omit the cayenne pepper in the salmon marinade.

*I use brown rice but white jasmine rice, sushi rice, or even cauliflower or quinoa would work!

*The Sriracha mayo can be made ahead of time.
