Avocado Toast

Three different but equally delicious variations on this brunch classic. First, we have beauty in simplicity, in which the avocado is the star. Next, there is a bruschetta-inspired avocado toast drizzled with a balsamic reduction. Finally, a piece of avocado toast topped with an over-easy egg and spicy chili oil. Use any bread you like, be it a slice of hearty seeded whole wheat bread, or keep it simple with a slice of ciabatta. Pick your favorite combination, or make all three versions for a light and healthy brunch option!

Prep Time: 20 minutes

Cook Time: 5 minutes

Yield: 3 pieces of avocado toast

Classic and Simple Avocado Toast

Ingredients:

  • 1 slice of toasted bread (I used ciabatta)

  • 1/2 of an avocado

  • Sprinkle of salt to taste

  • Sprinkle of red pepper flakes to taste

  • Drizzle of olive oil

Directions:

  1. Toast bread either in the toaster or fry it in olive oil on both sides until it is beautifully golden.

  2. Thinly slice the avocado and then set it on the toast.

  3. Season the avocado with salt and red pepper flakes.

  4. Drizzle with olive oil

  5. Enjoy!

Bruschetta-Inspired Avocado Toast

Ingredients:

  • 1 slice of toasted bread

  • 1/4 of an avocado

  • 1 Roma tomato

  • 1 clove garlic

  • 2 sprigs of Italian parsley or a few basil leaves.

  • 1-2 tbsp olive oil

  • Salt to taste

  • Drizzle of balsamic reduction

Directions:

  1. Chop the tomato into 1 cm cubes.

  2. Finely mince 1 clove of garlic.

  3. Chop the parsley or basil.

  4. Add chopped tomato, finely minced garlic, and chopped herbs to a bowl, and season with salt and olive oil.

  5. Mix the bruschetta mixture, and set it aside.

  6. Toast bread either in the toaster or fry it in olive oil on both sides until it is beautifully golden.

  7. Mash the avocado and spread it evenly on the toast.

  8. Spoon the bruschetta mixture over the toast.

  9. Drizzle with balsamic reduction.

  10. Enjoy!

Avocado Toast with Fried Egg and Chili Oil

Ingredients:

  • 1 slice of toasted bread

  • 1/4 of an avocado

  • 1 egg fried over-easy, or to preferred doneness

  • Drizzle of chili oil

  • Salt to taste

Directions:

  1. Toast bread either in the toaster or fry it in olive oil on both sides until it is beautifully golden.

  2. Mash and spread the avocado evenly on the toast.

  3. Fry an egg to preferred doneness, then place it onto the avocado toast.

  4. Season the egg with salt.

  5. Drizzle the egg with chili oil.

  6. Enjoy!
